Popular Gardens area Swedish/American restaurant coming to West Palm

A restaurant with roots in Sweden, but established and now wildly popular in Palm Beach Gardens, is expanding its footprint in Palm Beach County. Waxin's Restaurang & Bar will bring its great menu — and that very Swedish spelling, to its soon-to-open second location on Clematis Street in West Palm Beach.

The Swedish/American restaurant plans to go big on Clematis, not just in terms of style, food or atmosphere, but also in size. The new location will be nearly double the size of the original, occupying approximately 7,000 square feet.

Situated at the southeast corner of Clematis and Olive Avenue, Waxin's will feature al fresco dining along both streets, accommodating up to 70 customers. In addition, many of the indoor tables that line windows will also get a taste of the open air as those windows are designed to fully open to the outside when the weather cooperates.

Though the Palm Beach Gardens location is beautiful and extremely popular, with owner Patrik Waxin saying it's like the "Cucina of Palm Beach Gardens," (making the comparison to the popular eatery in Palm Beach), the Clematis Street restaurant is aiming take the design up another notch.

The interior is being designed by Millimeter, the number one restaurant designer in Sweden, Waxin said. Most of the furnishings are being imported from the Scandinavian country. Waxin said the difference between the original and the new location will be like "going from a BMW to a Bentley." The look will be good for social media, he said.

The large space allows for several sections that will serve different purposes.

The bar area, also known as the "living room," is being designed to make people feel comfortable and not be 'hoity-toity.' Waxin said this section can be a late night area.

Don't have a reservation or just getting into town? No problem. There will be an area set aside specifically for "drop ins."

Waxin's will also offer what they're calling their "chef's room" which is more of a fine dining experience where there will be no televisions or music.

As it is in the Gardens location, the menu is a roughly 50-50 mix of Swedish dishes and American ones.

You can find familiar dishes like tuna tartare, burrata, fish tacos, penne alla vodka, a chicken sandwich and even a hamburger, but don't be intimidated by the Swedish side of the menu —and so much to discover.

In addition to Swedish meatballs (yes, they have them and yes, they're delicious), there are other Swedish classics like the beef rydberg, which is prime beef tenderloin served with caramelized onions, potatoes, horseradish, egg and mustard creme, and Wallenbergare, featuring double ground veal steak, brown butter, green peas, lingonberries and potato puree.

Another Swedish classic is the toast skagen. This dish is popular both at home and in restaurants in Sweden and features hand-peeled, cold-water shrimp, homemade mayo, lemon and dill on butter toast. Interestingly, it's a Swedish classic, but named after a port town in Denmark on that country's Jutland peninsula.

Need a bottle of great wine to go with that fine dining experience? Like the Palm Beach Gardens location, the downtown West Palm Beach restaurant will feature an extensive, high-end wine room.

Though Waxin said they will carry some of the finest wines, with some even hitting $10,000 a bottle, he said the real focus is on price-value wines — great wines that don't cost as much as a car.
