"Creamy, garlicky butter beans with juicy, roasted, succulent tomatoes — it's the perfect anytime snack!" says the vegan chef (and daughter of Paul McCartney!), who hosts the new streaming series Mary McCartney Serves It Up on Discovery+.

Mary McCartney's Roasted Tomato & Butter Bean Toasts

3 medium garlic cloves, divided

3/4 cup drained and rinsed butter beans (from 1 [16-oz.] can)

24 cherry tomatoes (about 1 1/2 cups), each pricked with a knife

1/2 cup extra-virgin olive oil, divided

1/4 tsp. fine sea salt

2 Tbsp. vegan Worcestershire sauce (no anchovies)

12 (3/4-in.-thick) baguette slices

Fresh chives, cut into 1-in. pieces

  1. Preheat oven to 350°. Thinly slice 2 of the garlic cloves, leaving the remaining garlic clove whole. Set aside.

  2. Arrange butter beans on 1 side of a 13x9-inch baking dish; arrange tomatoes on the other side. Top each side with 1 sliced garlic cloves and 1 tablespoons of the oil; sprinkle both sides evenly with salt.

  3. Sprinkle safe over only butter bean mixture; toss beans to combine. Drizzle Worcestershire sauce over only tomato mixture; toss tomatoes to combine.

  4. Roast in oven until butter beans start to turn golden and tomatoes have softened, about 15 minutes. Remove from oven; let cool at room temperature while you prepare baguette slices.

  5. Arrange baguette slices on a large rimmed baking sheet. Drizzle each slice with 1/2 tablespoon of the oil. Bake at 350° until golden, about 12 minutes. Remove from oven; let cool about 5 minutes. Rub remaining whole garlic clove on oiled sides of baguette slices.

  6. To assemble, divide butter bean mixture evenly among toasted baguette slices; gently press down using a fork to slightly crush beans, if desired. Arrange 2 roasted tomatoes on top of bean son each toast. Garnish with chives.

Quick tip! If you're out of tomatoes, "use slices of jarred or canned roasted red bell pepper to top the toasts instead," suggests McCartney.
