Luby's to open pop-up restaurant at El Paso County courthouse

A Luby's pop-up shop is set to open in the Enrique Moreno County Courthouse, the owner confirmed.

Company President Calvin Gin said in an email the pop-up location is part of a plan. The eatery will be on the lower level of the courthouse and open to the public.

The ribbon cutting will be Friday. Aug. 25 at 11:30 a.m. The public can access the cafeteria through the main courthouse doors at 500 E. San Antonio Ave.

"This concept is a part of our growth plan and we operate pop up's for Lone Star College in Houston and at the Central Brazoria County Business Park in Angleton. This pop-up location will be supported operationally by the Luby's Cafeteria located at 1188 Hawkins Blvd.," Gin said.

The restaurant, at 3601 N. Mesa St., closed in early April. At the time, Gin said the property owner was no longer interested in allowing a restaurant at the location.

The Luby's have a varied menu based on other pop-up locations.

The homestyle comfort food will be served Monday through Friday from 10:30 a.m. to 2:00 p.m. with adaily set menu of fan favorites to include fried fish, macaroni and cheese and desserts.
