"I call my wife [Barbra Streisand] quality and I'm quantity," Brolin jokes to PEOPLE of his illustrious film and TV career

James Brolin isn’t slowing down anytime soon.

As the 83-year-old actor wraps up his role as the narrator for the third and final season of Netflix’s Sweet Tooth on June 6, Brolin tells PEOPLE exclusively he’s already excited for what comes next.

“After all these years, I feel like what's really exciting is your next idea,” Brolin says. “Film is like the old bread. It's half price the next day. It's what's next that's exciting.”

With over six decades in the film industry, Brolin has taken on different types of roles, from the medical drama Marcus Welby, M.D. to the TV sitcom Life in Pieces. But Sweet Tooth was a new venture as it marked his first voiceover role — though, it wasn’t for lack of trying!

“I had done probably 40 sample voice auditions and never got one,” Brolin reveals. Finally, his big break came with Sweet Tooth as his good friends Susan and Robert Downey Jr., who executive produced the project, put forth his name as the show's narrator.

“It was Robert Downey and Susan said, ‘We want Jim,’” Brolin explains. “I had lunch with him one day and within several weeks they called and said, ‘We want Jim only. Make a deal with him, Warner Brothers. Make a deal with him, Netflix.’”

“I thought that everything they seem to put their hands on has a really good chance,” he adds of why he decided to take on the narrator role.

Even after all these years, Brolin can’t get enough of the film industry. “I just love being on a set,” he says, which is part of the reason he’s taken on so many projects through the years.

“I call my wife quality and I'm quantity,” he jokes of his wife Barbra Streisand, who he’s been married to for over 25 years. “She's done 19 movies, and I've done 97 movies alone and 600 hours of television.”

In fact, Brolin is already back on set as he films his next project, Netflix’s Ransom Canyon with Josh Duhamel and Minka Kelly, a contemporary Western that Brolin describes as the next Yellowstone, but with “real Texan stuff.”

“I don't plan on stopping work at any time,” Brolin reiterates. “I tell everybody, ‘You're invited to my 110th birthday. Don't be late.’”
