Inspector's comments: "Third compartment of three compartment sink did not have minimum of 150 ppm quat sanitizer. Self dispenser tube had air bubble, leaking from dispenser. Add sanitizer by hand to provide 150-400 ppm quat or equivalent; test with test strip."

"Observed waffle mix dispensed at 46 degrees F to 74 degrees F (lower after initial draw, initial was 74 F from spigot). Advised to use time as control with written procedure posted or on hand listing items discarded. Must maintain 70 F on cold items if time as food safety control is used."

"Using time-as-control for hot items (discarded at end of service), sometimes for waffle mix. Write up standard operating procedures for time-as-control for items that time is used as food safety control."

Inspector's comments: "Observed female employee touch hair, put hands inside pants to adjust her shirt and proceed to go fix ice cream without washing her hands. Wash hands prior to any food handling."

"Observed tomatoes, onions and pickles cold holding above 41 degrees F. Cold-hold food at 41 degrees F or lower."
