About half of the Greene County establishments inspected this week had no violations

Of the 41 routine inspections conducted this week by the Springfield-Greene County Health Department, 23 establishments had no violations cited.

The 23 establishments include Cox South's Atrium Bakery, nearly all of the concessions stands at Hammons Field and The Sub Shop on Seminole Street.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Amigo's Mexican Restaurant, 2118 S. Campbell Ave., Springfield. Aug. 24 re-inspection – Result: active. Person in charge purchased new prep cooler to replace cooler no longer functioning properly. No violations cited.

Atrium Bakery, Cox South, 3801 S. National Ave., Springfield. Aug. 25 routine inspection – Result: active. No violations cited.

Bambino's Cafe & Bake Shop, 2810 E. Battlefield Road, Springfield. Aug. 29 routine inspection – Result: permitted with re-inspection. Discussed 1. Fixing the doors on wait station under-counter cooler so they close easily and do not allow warm air to enter unit; 2. Training all dishwashers how to test the dishwasher for proper sanitizer levels; 3. Increasing cleaning frequency for ice machine; 4. Repairing hole in wall in mop sink area. Five priority violations: Observed foods in cookline prep coolers at temperatures above 41 degrees Fahrenheit — chicken at 46 degrees, diced tomatoes at 43 degrees and pepperoni at 45 degrees; observed no air gap on pre-rinse sprayer; observed use of window and surface cleaner to clean wood baker's table, which was corrected at time of inspection by washing and sanitizing table; observed spray bottles of chemicals not labeled; observed numerous flies throughout kitchen and in front bar. Three non-priority violations: Observed cooling foods that are still warm are placed in plastic bins over six inches deep; observed wood baking table is deeply scored and needs to be sanded smooth; observed can opener is dirty.

Braum's Ice Cream No. 272, 2555 N. Kansas Expressway, Springfield. Aug. 25 complaint inspection – Result: permitted with re-inspection. Complaint received regarding bare-hand contact with ice, hand washing after cleaning tables, and dirty ice bins. One priority violation: Observed heavy flies at counter landing on syrup pumps and single-service items, advised restaurant to contact pest control. One non-priority violation: Observed soda fountain ice bin and main ice machine bin not clean.

Braum's Ice Cream No. 284, 2617 W. Republic Road, Springfield. Aug. 29 re-inspection – Result: permitted with re-inspection. One priority violation: Observed small amount of yogurt, eggs and butter were reloaded into dairy cooler and all products were above 41 degrees. Butter and yogurt at 44 to 45 degrees was moved to walk-in cooler and boiled and shell eggs were voluntarily discarded. Some thermometers in the case were reading as high as 60 degrees, and this is a repeat violation.

Break Time No. 3137, 121 S. State Highway 125, Strafford. Aug. 25 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed food debris build-up on inner lining of all three freezers in walk-in; observed syrup spill in the dry storage room and microwave kept unclean.

Casey's General Store No. 2251, 949 S. Grant Ave., Springfield. Aug. 24 routine inspection – Result: active. No priority violations. One non-priority violation: Observed employee not wearing a beard net while prepping pizza, education provided and corrected on site.

Chicago Smerq's, 3202 W. Republic Road, Springfield. Aug. 25 routine inspection – Result: active. No violations observed at time of inspection.

Domino's Pizza, 4032 W. Republic Road, Springfield. Aug. 28 routine inspection – Result: permitted with re-inspection. One priority violation: Observed bottom drawers of pizza prep cooler holding potentially hazardous foods at 43 degrees to 47 degrees. Two bags of sausage and two half-pans of cheese voluntarily discarded. One non-priority violation: Observed men's restroom hot water only reaching 82 degrees, when restroom faucets should reach at least 100. Women's restroom and kitchen hand sinks both over 100 degrees as required.

Domino's Pizza (A&M Pizza), 4021 S. Campbell Ave., Springfield. Aug. 24 routine inspection – Result: active. No violations noted at time of inspection.

Drury University - Einstein Bro Bagels, 900 N. Benton Ave., Springfield. Aug. 28 routine inspection – Result: active. No violations noted.

El Rincon, 306 E. Commercial St., Springfield. Aug. 29 routine inspection – Result: active. No violations noted during inspection.

Imo's Pizza, 636 W. Republic Road, Springfield. Aug. 28 routine inspection – Result: active. No priority violations. One non-priority violation: Observed cutting board on prep cooler near fryers is scored as well as two small cutting boards used for prep, which need to be resurfaced or replaced.

J&L Foods, 2944 W. Sunshine St., Springfield. Aug. 31 routine inspection – Result: active. No priority violations. One non-priority violation: Observed brisket cooling while wrapped in slide cooler, with temperature still at 95 degrees as of 10 a.m. Owner had placed brisket in cooler about 8 a.m. after removing it from smoker. Owner instructed to use proper method, removing brisket from cooler and unwrapped, then placing loosely covered in flip freezer. Owner will monitor with thin probe thermometer to make sure brisket is below 70 degrees before the 2-hour-mark or will reheat to 165 degrees.

Jimmy's Egg, 3837 S. Campbell Ave., Springfield. Aug. 30 complaint inspection – Result: active. No violations cited.

Jump Mania, 3202 W. Republic Road, Springfield. Aug. 25 routine inspection – Result: active. One priority violation: Observed individual nacho cheese servings hot holding at 115 degrees to 117 degrees, which was corrected by voluntarily discarding. Discussed keeping shelf-stable servings on the shelf and microwaving them per order. No non-priority violations.

Kentucky Fried Chicken, 1808 W. Battlefield Road, Springfield. Aug. 28 routine inspection – Result: permitted with re-inspection. One priority violation: Observed small under-counter prep cooler on-line holding coleslaw at 44 degrees to 46 degrees, which was voluntarily discarded. Manager placed a work order immediately and agrees not to hold any potentially hazardous foods in the unit until it is repaired. No non-priority violations.

Kum & Go No. 1475, 3416 S. National Ave., Springfield. Aug. 25 routine inspection – Result: active. No violations noted.

Kum & Go No. 472, 1505 N. National Ave., Springfield. Aug. 24 routine inspection – Result: active. Two priority violations: Observed creamer in cream dispenser above 41 degrees, which was voluntarily discarded and situation was corrected; observed cleaning spray bottle stored above open boxes of sugar and sweetener, education given and corrected on site. Three non-priority violations: Observed food storage containers with old date labeling sticker residue on them, repeat violation; observed ceiling vents above hot hold rollers not clean, repeat violation; observed coffee cream dispenser nozzles found with incorrect cut.

Discussed cutting milk dispenser tubes at an angle no longer than one inch and cleaning up drink syrup from leaking dispenser in cupboards. No priority violations. Three non-priority violations: Observed box of foam cups stored on floor in store room; observed fan covers and ceilings in walk-in cooler have accumulation of dust; observed hand sink blocked with crate.

Southbound Bar & Grill, 5739 S. Campbell Ave., Springfield. Aug. 29 routine inspection – Result: permitted with re-inspection. One priority violation: Observed reach-in cooler next to prep cooler holding various potentially hazardous foods such as sauces, mayonnaise, sour cream, etc. at 43 degrees to 44 degrees, which were moved to walk-in cooler. Three non-priority violations: Observed buffalo sauce cooling in slide cooler with lid on, sauce was just placed in unit as it was still at 137 degrees, so cook immediately uncovered sauce, placed quarter pan in ice bath and placed in walk-in cooler; observed vent hood and filters have grease build-up, maintenance also checking to see why motor is turning on and off intermittently; observed ice shield and bin is not clean, maintenance on-site agrees to clean machine.
