Greene County elementary, high schools cited for food inspection violations

A Springfield elementary school cafeteria was cited for not holding hamburger meat at the proper temperature and a Greene County high school concessions stand had to discard 50 pounds of popcorn after an inspector noticed what seemed to be a mouse hole in the bag.

David Harrison Elementary Cafeteria, 3055 W. Kildee Lane in Springfield, was holding ready-to-eat portions of hamburger that ranged from 111 degrees Fahrenheit to 119 degrees and a full pan of hamburger meat at 131 degrees in a warmer that needed repair, according to an Oct. 4 Springfield-Greene County Health Department food inspection report. Food that is being hot held should be kept at 135 degrees or higher in order to prevent the growth of dangerous bacteria. The problem was resolved by heating the food up to 165 degrees and turning the hot-hold unit up as high as it could go. The cafeteria will need to be re-inspected when the unit is repaired.

Willard High School Football Concession, 515 E. Jackson St. in Willard, had a 50-pound bag of popcorn stored on the floor of the concession area, according to an Oct. 2 report. The bag had "what appeared to be a mouse hole in it" and was discarded by the person in charge.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.
