Food truck will offer Belgian-style fries, dips

HUNTINGBURG, Ind. – Lovers of gourmet crafted French fries will want to get to Friedman Park in Newburgh for the upcoming Party in Paradise on Sept. 30, because a new food truck from Huntingburg called Dip Stix will be serving up real, hand-cut, twice-fried fries in the Belgian style alongside other dippers with homemade gourmet sauces.

The owners are Susan Stout and Trefin Luker. The ladies met through their husbands, Andy Stout and Tim Luker, who are friends who grew up in Huntingburg. When the families decided to move back nearer family, Susan and Trefin started thinking about what kind of business to open up together. They laughed about having a food truck, but the idea took root.

Trefin spent part of her military childhood stationed in Belgium and learned first-hand about those incredible Belgian fry shops and carts where the fries are sliced, par-cooked and crisped to order, then served in a paper cone with a choice of delicious, creative sauces. She even got to help the owner of her favorite shop cut the potatoes. Besides the fond memories, what could be a better food truck treat?

The Stix

The duo is constantly cutting fresh russet potatoes and partially frying the fries to soften the interior without browning the exterior. After the partially cooked fries cool, they are finished in hot oil to make them crisp and golden on the outside, hot and fluffy on the inside. A few other fun dippers such as pepperoni pizza stix in eggroll wrappers, mozzarella cheese stix, and pickle stix are offered as well. It’s the fries and sauces that will always take center stage, however.

The Dips

Regular ketchup and ranch dip are always available, and each day will bring another creative red and white sauce, which are sometimes created to match the theme of an event.

Some popular varieties have been:

  • Curry ketchup

  • Honey Sriracha ketchup

  • Sweet Heat chili and pineapple

  • Vampire Slayer Garlic and Parmesan

  • Dill with it (a white sauce)

  • BOOM (a Buffalo-style hot sauce)

  • Get a Gripp (with BBQ chip seasoning)

  • A truffle-scented white sauce is in the works.

Dip Sticks will be serving at occasional Warrick County events and will also serve at private parties. Watch the Facebook Page for dates and times of service or call 812-630-8830 for more information. At this time, the truck does not have a license to serve in Vanderburgh County.
