Tasty ratatouille prepared with courgettes, aubergines, pepper and Hellmann's Tomato Ketchup.

Recipe ingredients:

300g mix (red/green/yellow) pepper
3 dollops* Hellmann's Tomato Ketchup
100g courgettes
100g aubergines
100 g cherry tomatoes, halved
1 shallot
1 small onion
200 ml can chopped tomatoes or passata
1 garlic clove, finely chopped
1 tablespoon olive oil

Recipe steps:

  1. Cut all the ingredients in chunky pieces.

  2. Heat the oil in a saucepan and saute the shallot, onion and garlic for 4-5 mins. Add the canned tomatoes or passata.

  3. Stir in the vegetables and simmer for 30 minutes, until cooked through.

  4. Before serving add the Hellmann's Tomato Ketchup; mix all the ingredients and serve.

Serving suggestions: Serve with rice, pasta or couscous.
