Do you have a “go-to” recipe?

As a demonstration chef, Jamie Dunn has many “go-to” recipes up her culinary sleeves depending on the situation. Is it for a sick friend, are the kids coming home, is there a special breakfast coming up?

Dunn’s goal as a featured chef at the upcoming OK Cooking School on April 12 is for those watching to find a go-to recipe of their own among the six dishes she will be making even if it’s just a part of a recipe like the sauce she makes for her raspberry biscuits.

“The raspberry sauce is fantastic on everything, not just the biscuit. It’s great on waffles, it’s great on ice cream so it’s like you’re getting two recipes that can become your favorites. You can take that sauce and you can make it raspberry, you can make it blueberry, you can do blackberries,” Dunn said.

Other dishes on the menu will be a chicken poblano soup and a green chile wonton. For a twist, Dunn will use an Instant Pot to make a savory beef braciole, which is a rolled piece of steak with parmesan and parsley. Her meatless dish will be fresh corn tomato pasta.

"It’s really good with Bixby corn …. I mean it couldn't be better than that because it really is just fresh corn you cut off the cob and tomatoes and feta cheese. It’s really good, and it’s really good left over,” she said.

More freshness comes with dessert, with Dunn capping off the meal with her fresh berry torte.

“It has this luscious cream that’s not only good on this, but it’s really good on scones too,” she said. “It’s kind of like a Devonshire cream, so it’s a beautiful torte.”

A home cook is how Dunn, a Bartlesville native, humbly describes herself. She studied food sciences at OSU and always wanted to do food demonstrations, a passion she had even in high school. Once her children were old enough, she connected with Taste of Home magazine and started travelling and cooking all over the country. For more than 10 years, she has been a featured chef in the OK Cooking School, a popular show that brings in hundreds of people and vendors.

Dunn loves helping people cook for their families and helping them be successful in the kitchen with everyday cooking. She sees food as a way to not only connect with people but to reach out and bless others. To do that “you don’t have to be a well-known chef, you don’t have to be great, you’re going to make mistakes, just know it,” she said.

The show will have door prizes and a Branson entertainment package will be given away. Everyone receives a gift bag that exhibitors pack with products, coupons and recipes.

“Honestly, this bag that you get is worth more than the price of the ticket,” Dunn said.
