The Dish: Four-course wine dinner at Breaker to feature French vintner rep

Four of The Breakers’ culinary leaders — including its wine director and executive chef of restaurants — are behind an extravagant wine dinner Wednesday at the resort hotel.

The 7 p.m. event in The Breakers’ Magnolia Room will feature a four-course dinner paired with wines from esteemed French winery Château Cos d’Estournel of the Bordeaux region.

Seating is limited and advance reservations are required for the affair spotlighting special guest Charles Thomas of Cos d’Estournel.

Among those orchestrating the event are two master sommeliers at The Breakers: Virginia Philip, wine director, and Juan Gomez.

On the cuisine side: Joey Tuazon, chef at The Breakers’ HMF, and the resort’s executive chef of restaurants, Anthony Sicignano.

After a wine reception with passed hors d’oeuvres, the wine dinner starts with a dish of seared sea scallop with crispy rice, yogurt ginger crème and tomato confit.

A second course of HMF “pot pie” with corn, leeks, Roquefort and blueberry jam will be followed by a third course of wood-grilled beef tenderloin with truffled parsnip purée, roasted salsify, chanterelles and red-wine currant sauce.

For dessert: chocolate truffles.

Several wine pairings during the evening will include, among others, Cos d’Estournel Bordeaux Blanc 2018; Les Pagodes de Cos d’Estournel 2016 in magnum; and Château Cos Labory Red Bordeaux 2018.

The Wednesday wine dinner at The Breakers is $525 a person.
