Country star Luke Bryan eats sushi from East Village restaurant before his show in Colfax

Country star Luke Bryan tried recipes from the owner of sushi restaurant Miyabi 9 in the East Village before his concert in Colfax Thursday night.
Scott Le, Miyabi 9 owner, was tasked by Farmland, a brand from pork producer Smithfield Foods, to create original recipes using Farmland bacon and ham products for a “bacon sushi bar” that was presented to Bryan backstage, according to a news release.
Bryan performed at Schnell Family Farms in Colfax with openers Chayce Beckham, The Peach Pickers and Kameron Marlowe as part of his Farm Tour.

Le made three sushi rolls for the country star. The Bakin Roll featured avocado, cucumber, and cream cheese, wrapped in hickory smoked classic cut bacon. The BLT Rice Cracker combined a deep-fried sushi rice cracker layered with crispy applewood smoked center thick cut bacon, avocado, homemade spicy mayo, green leaf lettuce, cherry tomato, and eel sauce. And the Farmland Roll was filled with panko-crusted ham steak tempura and carrots, topped with katsu sauce and served with mustard.
“I’ve tried a lot of different foods on the road, but never thought I would have this combo,” Bryan said, according to the news release. “My friends at Farmland made me this sushi with their bacon at this year’s Farm Tour. It was insane.”
Miyabi 9 is located at 512 E. Grand Ave. in Des Moines.
