The Saved By the Bell alum is releasing her second cookbook and this time she's helping her fans "level up" their leftovers, she tells PEOPLE. Here We Go Again (out Sept. 26) is inspired by Thiessen's own mother's transformative cooking. "It was leftover taco meat one night made into some sort of taco-mex chili a couple days later," Thiessen tells PEOPLE of her family dinners growing up. "My mom was always doing things like that, and so this book was really something I've always wanted to do."

José Andrés is compiling his humanitarian work at his nonprofit, World Central Kitchen, into a cookbook (out Sept. 12).
