Brisket and eggs, plus cornbread pancakes, are for breakfast at Jersey Shore BBQ

For more than a decade, Doug Walsh's Jersey Shore BBQ has been known for slow-smoked brisket, pork shoulder and all things barbecue.

Now he is serving breakfast at the Point Pleasant Beach restaurant, incorporating ingredients used at lunch and dinner into potato and egg bowls, pancakes and breakfast sandwiches.

"Our food translates to breakfast very well, and I saw a gap locally for something unique," said Walsh, who opened Jersey Shore BBQ with his wife, Dana, in Belmar in 2010. They moved it to the larger Arnold Avenue location two years ago.

"We took what we do really well and then applied some minor details and touches for breakfast," he said.

For example, Walsh uses his recipe for cornbread, offered as a side at lunch and dinner, to make pancakes ($10). For the brisket bowl, his smoked brisket is served over breakfast potatoes seasoned with dry rub and thyme butter and topped with eggs, pickled onions and barbecue aioli ($15).

The St. Paddy's Day bowl is sliced corned beef with potatoes, eggs, caramelized onions and mustard crema ($15). Rolls from nearby Joe Leone's Italian Specialties are filled with brisket, eggs and cheddar cheese for the Big Bubba sandwich ($13).

Head Chef Danny Brown said that in the kitchen, they are making as much as possible from scratch — "even our breakfast potatoes," he said.

"We ... take a fresh potato, blanch it, then crisp it up to order so you get a nice, crispy potato that's soft inside.

" ... That's one of the things that's often overlooked with breakfast, and those are things that we really have tried to focus on," he said. "Even the little things have to be great."

Brown's favorite dish is the "Big Country," an open-face plate of biscuits, fried chicken and sausage gravy ($15).

"We make the buttermilk biscuits fresh every morning ... and I love a good savory breakfast," he said.
