The Beauty Benefits of Eggs

Did you know eggs have a myriad of beauty benefits? For starters, the protein and vitamins in eggs are crucial for healthy hair. Eggs contain B-12 and biotin, which can help nourish hair, skin and nails. Another beauty bonus is that eggs are full of Omega 3 fatty acids which boost moisture, and promote clear skin and shiny hair. The amounts of Omega 3 vary with the hen’s diet, so look for organic, cage-free eggs (no antibiotics or hormones) enriched with Omega 3s.

Eggs also have many health benefits too. A large egg is only 77 calories, and has 5 grams of fat, 6 grams of protein, 9 essential amino acids, along with iron, phosphorous, selenium and A. You will find an array of B vitamins in eggs as well, including 100 milligrams of choline which is responsible for detoxification, DNA replication, the nervous system, mood and memory. Other B vitamins include B1, B2, B3, B5, B6, B-12, biotin and folate (folic acid). If you are pregnant, folic acid is crucially important to your growing baby. Omega 3’s also help to keep your body’s inflammation down and help to strengthen your immune system.

Contrary to popular belief, you should most definitely eat the yolk. This is where most of the nutrients are found. Many people think that eating egg white omelets are healthier and lower in fat, but that is a misconception. Our bodies need the fat for a smarter brain, joint, muscle and nervous system function. Eating the yolk, not only gives you all of those vitamins already mentioned, but also vitamin A. This vitamin greatly contributes to healthy skin as well as immunity. By consuming the yolk, your body uses the saturated fat for hormone production and better absorption of vitamin and minerals.

Easy Egg Bake

Ingredients:

8-10 Organic, Omega Eggs 1 medium chopped onion

1 package of turkey bacon

1 cup well chopped broccoli (I use yesterday’s cooked leftovers)

1 tomato, chopped

½ cup assorted chopped colored papers

1 bag of pre-washed spinach

himalayan salt & pepper to taste

optional: cheese

Directions:

Preheat oven to 325 degrees. Place onion and olive oil in a saute pan and cook until translucent.

Chop the turkey bacon and add to onion until cooked through. Add the other veggies including

raw broccoli (if using precooked broccoli, add later). When veggies are cooked through add

spinach and turn off heat. Let spinach wilt by putting cover over pan. Meanwhile, Beat the eggs in

a bowl. Spray olive oil spray and coat a large glass Pyrex dish. Add cooked mixture to the eggs.

Add seasoning and stir. Pour in coated dish. Bake at 325 for 25-35 minutes. Check to see if it is

cooked through the middle. If not, cook longer to set middle. Let cool and slice into squares. This

can also be made in muffin tins, but I have found clean up to be labor intensive.

Note: This recipe can be varied: use different vegetables, add cheese, sausage, etc. I often use

Applegate Farms Chicken Apple Sausage. It gives the Egg Bake great flavor. It is a great grab

and go snack or meal and can also be frozen for later use.
