I don't take what I'm about to say lightly, so listen up: This is one of the best desserts I've ever made. And I've gotten pretty darn good at perfecting cheesecake since working at Delish-for y'all! You love your cheesecake. But as someone who recently visited The Cheesecake Factory and tasted their pumpkin cheesecake, I can definitively say: Mine is better.
It might be better because of the Oreo crust or the drizzles of melted chocolate and caramel. Whatever it is, it makes it totally worth making this gorgeous dessert at home. Don't be intimated by cheesecake: I know it's an intense dessert to bake, but this recipe is foolproof-and easy-I promise. You make an Oreo crust out of only crushed Oreos and melted butter and then a classic cheesecake filling of cream cheese, pumpkin purée, eggs, and pumpkin pie spice. No special ingredients.
I did do a water bath because I get nervous when baking a cheesecake (don't crack, top!), but I honestly don't think you have to with this one. Plus, you're drizzling the whole thing with melted chocolate and caramel, which will hide any cracks it gets in the oven. If you're still debating what dessert to make on Thanksgiving, this one is it.
