Bobbi’s Delicious Cauliflower Mash

I have 50 people coming to my house for Thanksgiving. That’s a lot of different food preferences. To offer a mix in addition to pies and stuffing, I always have healthier options too. One of my favorites is cauliflower mash. Some people claim it tastes exactly like regular mashed potatoes—not exactly, but it is delicious. It also takes about half the time of classic mashed potatoes, only about 30 minutes. The dish will appeal to those who want a low-fat, low-carb, low-calorie, and vegetarian option. If you want to make it work for the Paleos and vegans in your group, just swap the ghee and yogurt for 1/3 of a cup of vegetable broth.

Serves 8.

2 heads of cauliflower cut into bite-sized florets

3 tablespoons of ghee

3 tablespoons of greek yogurt

Salt and pepper to taste

Add an inch or two of water to a large stockpot and add cauliflower. Cook until very tender—around 10 to 15 minutes. Place the cooked cauliflower in a food processor and add ghee. Blend until smooth. Place in a serving bowl, add salt and pepper to taste.
